Recipe: LOW-FAT Key Lime Pie

In my ongoing effort to be Fit Forever, I would like to share my Key Lime Pie recipe.  My LOW-FAT recipe is based on the recipe for "Real Key Lime Pie from Captain Bob's," found in The Key Lime Cookbook by Joyce LeFray Young, © 2007 Ketch & Yawl, LLC, Marathon, FL.

5 egg yolks
14 ounces Fat Free sweetened condensed milk
5 ounces Key Lime juice (I use Nellie & Joe's Real Key Lime Juice)
1 Sugar Free graham cracker crust
Cool Whip Lite
Zest of 6 key limes

In a bowl, blend egg yolks & Fat Free condensed milk
As you blend, slowly add Key Lime juice and zest of 3 key limes
Pour mixture into pie crust
chill in refrigerator 2-3 hours
Top with Cool Whip Lite
Sprinkle top with zest of remaining 3 key limes (I also add key lime slices for appearance)
